I attempted this a awhile ago, and all seemed well to we got it in the keg. Diacytl, so its time for take two. Same recipe, better fermentation practices
5 lbs 2-row
1 lbs Flaked Corn
1 lbs Rice Solids
.75 oz Liberty pellets @ 60 min (4.3% AA)
Big ol starter of wyeast 2035 American Lager
MrCellars rendition of the nailers helles came out fantastic so I have faith in the lager practices this time around

Th honey wheats a real simple beer. 50% wheat and 50% pilsner malt, around 20 ibu for
One of the noble hops. Throw a couple pounds of honey in, and after a week of fermentation we got a round watermelon like the size of your head. Cut off the peel, ground it up in the food processor and into the better bottle she went.
I hav heard that watermelons are hard to extract flavor from as well, and this is the first time using one so well see what happens!

Re: Schaefer Clone
Update on the American lager, est final grab was 1.009, and I got down to 1.006. Taste was solid out of the fermenter, I tried to do a forced diacytl test, but the jar I was hearing up shattered giving inconclusive results. I know what I did wrong, so after it lagers for 3 weeks I'll try again. If everything tastes good at that point, into a keg she goes
